Why would you pollard an olive tree?

Because the branches get too tall and they start to break and there’s a road beside that one so it was going into the road and if it fell with a storm then it could’ve crushed a car or my fence they are surprisingly resilient and grow back real quick so when you cut them like that, they get like a nice almost like bushel appearance. I don’t know how to describe it but we don’t collect olives from the trees that are on the property of the house either so we just keep them short
I’m no arborist, but I think the reason the branches get too tall and break easily is because you’re pruning it wrong. It’s so desperate to grow that it’s sending up water sprouts instead of having proper branching.
No the tree was too big growing over the road it hadn’t been cut in the 15 years no one lived here; those stick looking things sticking up will be cut shorter as well.
